2 ripe avocados
1/2 a red onion
Juice of half a lime
A small handful of coriander
A pinch of salt (to your taste)
Put the tomato, red onion, coriander, lime and salt in the food processor and blend.
Then add the avocados and pulse just a bit so that you end up with a nice chunky guacamole.
Taste and check the seasoning, add more salt if you need to.
I add the avocados last so that you don’t work them too hard, if you process them too much they’ll turn brown and you’ll end up with a horrible brown guacamole rather than a gorgeous green guacamole.
