I talk a lot about being prepared so you can eat healthily.  A great trick is to make your breakfast the night before so you’re all ready to go the next day.  This recipe is perfect for just that!  This used to be a staple of mine when I was studying nutrition and working full-time.

Ingredients (makes 1 large serving or 2 smaller servings)

1/2 cup of oats
1 cup of milk (I use almond or home-made cashew milk)
1 tablespoon of chia seeds
1/2 teaspoon of ground linseeds
1/2 teaspoon of cinnamon
1/4 cup of flaked almonds
1 apple grated
Juice of half a lemon

Method

Put all the ingredients in a bowl except the apple and lemon juice and combine.

In the morning grate the apple, add the lemon juice and then mix into your muesli.

 Tips

Pop it in a jar so you’re ready to go the next day.

If you know you’re going to be in a super rush in the morning, just combine the apple and lemon juice and then add it to the muesli the night before. The lemon juice will stop it going too brown overnight.

If the muesli’s a bit thick in the morning just add an extra splash of milk to loosen.
