First of all a little intro to my first live recipe post! I’m no chef, just someone who likes to play around with healthy food in the kitchen. I’ll share with you my favourite recipes and if you give it a try, tag your creations #nickyforlife.

I felt chilly today, Autumn is really here, so I wanted something to warm me up this morning and I threw together this porridge that was really delicious. I don’t like my porridge too thick, if you want it a bit thicker add less milk.

Ingredients (for one)

  • 1/4 cup of porridge oats (soaked overnight in the almond milk)
  • 2/3 cup of almond milk
  • 1/3 cup of coconut milk
  • 1/3 cup of frozen raspberries (heaped)
  • 1/2 tsp of vanilla extract or vanilla seeds from 1/2 a vanilla pod
  • 1 heaped tsp of almond butter (it was a very big teaspoon full!)
  • Flaked almonds (optional)


Soak the oats overnight in the almond milk.

In the morning add all the ingredients to a sauce-pan and cook on a low heat for around 15-20 minutes.  Add extra almond milk as you go to get your desired consistency.

Add flaked almonds on top (or any nuts/seeds of your choice).

Oats are wholegrain and full of soluble and insoluble fibre. They digest slowly giving you sustained energy. They’re also packed full of B vitamins which are great for energy too.

Almonds are a powerhouse of goodness! They’re full of protein, essential fats and vitamin E, an antioxidant. Protein takes longer to digest, which helps you feel fuller for longer.

And finally the star of the show, raspberries, these berries are packed full of antioxidants, great for your immune system if you want to keep those colds at bay.
