The great thing about this breakfast is that you make it the night before and it’s ready to go the next morning.  You can enjoy it as soon as you get up or take it to work with you.

Ingredients (serves 1)

1/4 cup of oats
2/3 cup of unsweetened almond milk (or any other milk of your choice, make sure it’s unsweetened and if you’re using dairy, use full fat)
2 tablespoons chia seeds
Vanilla seeds from half a vanilla pod
1/4 cup of frozen blueberries


Simply combine all the ingredients in a bowl and leave in the fridge overnight, enjoy in the morning. You can add a dollop of yoghurt if you fancy it.
