I’m all for quick healthy meals and this is one of them. Eggs are packed full of protein, B vitamins, vitamin K and vitamin D and if you add a stack of veggies to them as well, you’ve got a really nutritious meal. You can have this anytime, for breakfast lunch and dinner.

You’ll see I’m not precise on the veggie proportions as this is one you can really experiment with. Have a look to see what veggies you have in the cupboard.


1/2 a red onion
1/2 a red pepper
A handful of baby tomatoes
A few broccoli florets
A handful of spinach
2 eggs
Salt and pepper to taste
Some feta (optional)
A handful of coriander (optional)
Avocado (optional)

(This is for one – if you want enough for two, just double the eggs and add some extra veggies)


  1. Add a little bit of olive oil to a frying pan along with a dash of water, heat on a medium-low heat and then add the onions.
  2. Once the onions are soft add the peppers.
  3. After a couple of minutes add the broccoli and tomatoes. Don’t overcook your veggies, they should still be crunchy and retain their
  4. vibrant colour (broccoli is a dull green when overcooked).
  5. Meanwhile whisk the eggs up in a bowl and season.
  6. Once the veggies are cooked add the eggs to the pan.
  7. Finally add the spinach, coriander and feta (you can also add some avocado at this point if you’ve got some lying around)
  8. Serve and enjoy. You can always add a slice of toast. I tend to add a side guacamole or pesto to it as well.

Like I said experiment with this recipe, if you like things spicy you can add some chilli to it or some tabasco sauce.
